PB&J Pancakes on the Run
by Rosemarie Mager, Lindbergh Elementary School, Buffalo, NY
Yield: 50 servings

Ingredients
150 Aunt Jemima® Silver Dollar Pancakes, thawed (SKU 43578)
6-1/4 lb. Peanut butter, smooth
6-1/4 lb. Grape jelly
8 Bananas, fresh, peeled and sliced into coin shapes

Preparation

  1. Cook pancakes according to package directions.
  2. For 1 serving: Evenly spread 1 hot pancake with peanut butter and jelly. Place one banana “coin” on top of peanut butter & jelly. Repeat with a second layer of hot pancake, peanut butter, jelly and a banana coin. Top with 1 more hot pancake to complete the build.
  3. Repeat the build for the other 49 servings.

NOTE: Topping suggestions could include whipped cream, whipped cream with yogurt and sprinkles. If you don’t have bananas, try apple slices instead.
